Spicy Chorizo & Mushroom Pizza w/ Pickled Onions & Honey Drizzle

Spicy Chorizo & Mushroom Pizza w/ Pickled Onions & Honey Drizzle

A base of honey-marinara sauce is topped with spicy chorizo, mushrooms, fresh mozzarella, pickled red onions, and a drizzle of honey.

    Ingredients list

Pizza Dough: Dough for pizza can be made with a wide variety of flours, from all-purpose to bread flour to semolina, and can be rolled out thin and crispy or thick and chewy, depending on personal preference. Premade crusts, tortillas, or sliced bread are common alternatives to pizza dough.

Spicy Pickled Onions: Onions in a spicy mixture of vinegar, water, and spices are spicy pickled onions. They have a tangy, spicy flavour and are typically thinly sliced. Pickled onions are a fantastic pizza topping because they add a tangy, acidic flavour without overwhelming the pizza’s other flavours.

Marinara Sauce: Marinara sauce is an authentic Italian tomato sauce frequently used on pizzas. Tomatoes (crushed or puréed), garlic, herbs, and sometimes salt, pepper, and a little sugar make up the base of this sauce. You can use tomato sauce, diced tomatoes, or pesto instead of marinara sauce.

Spicy Chorizo: The spicy chorizo sausage is a staple in Spanish and Mexican cooking. It’s a pork product seasoned with various hot peppers, paprika, and other herbs and spices. For a bold and savoury pizza, try slicing up some chorizo and adding it as a topping, or crumble it up and mix it with the cheese.

Cremini Mushrooms: Also called baby bella or brown mushrooms, cremini mushrooms are a type of wild mushroom that resembles white button mushrooms but has a slightly earthier flavour. Sliced cremini mushrooms can be added either raw or sautéed in oil before being spread across the pizza’s surface.

Olive Oil: Olive oil is a pantry staple in many kitchens, and it’s a common addition to pizza crusts to help them stay chewy and add a hint of nutty flavour. It can be brushed on the crust’s edges for a golden, crispy crust or drizzled over the dough before the toppings are added. Vegetables and meats can be cooked in olive oil before being added to the pizza.

Mozzarella: Pizzas typically feature mozzarella because it melts evenly and creates a smooth, velvety surface when baked.

    Directions

    • Turn the oven temperature up to between 500 and 550 degrees Fahrenheit (Preheat your pizza stone if you have one)
    • Put the sliced mushrooms in a mixing bowl with the salt, freshly ground pepper, red wine vinegar, and olive oil. Toss so that the mushrooms are uniformly covered.
    • Pull and roll the dough to the desired dimensions, leaving a 1/2-inch border for the crust.
    • Coat the dough with olive oil and spread the basil marinara sauce.
    • Layer the pizza with the chorizo and mushrooms. Crumble some mozzarella cheese on top.
    • Bake the pizza until the crust is golden and the cheese begins to brown. On a baking sheet, cook for 8 minutes, while a pizza stone only needs 6 to 8.
    • Take the pizza out of the oven and rest for ten minutes before cutting.
    • Pickled onions and honey would be delicious on top.

Instructions for use and long-term storage

    Suggestions for Serving:

    • Pair the pizza with a salad, garlic bread, or soup for a hearty, filling meal.
    • Sprinkle some fresh herbs, like basil or parsley, over the pizza before serving for an extra burst of flavour and crunch.
    • Pizza left over can be eaten cold as a snack or reheated in the oven or microwave for a simple lunch the next day.

    Storing:

    • Pizza left over should be refrigerated in a sealed container or plastic wrap.
    • Reheating pizza is as simple as placing a slice on a plate and nuking it for 30 seconds to a minute. Another option is to heat the piece in the oven at 350 degrees Fahrenheit (180 degrees Celsius) for 5-10 minutes or until heated.
    • Keep the pizza in the fridge for up to 3 days.
    • Pizza can be frozen successfully only before it has been baked. Put the frozen pizza in the oven and bake it according to the instructions on the packaging, adding a few minutes if necessary.
